Confit of Duck & Cassoulet!

We’ll start with whole ducks, bone them, then make appetizers, salad, main course, render the fat, marinate the duck pieces for confit, crisp up the legs all the while making a cassoulet. For this class I recommend up to 6 participating in the class but as many as 12 eating! (So up to six cook and serve and the other six get to be served! Perfect Valentines party?)
Regular price starts at $500 but special February price is only $400 inclusive.

Guest Chef dinners at Nieuport 17

We found new friends and a great opportunity to play in somebody else's kitchen up at Nieuport 17 in Tustin!  Cameron (the owner) and Co. have invited me into their kitchen and given me 3 beautiful rooms to use. Black Sheep legacy with entire menu available!

It's been our experience that many times when a restaurant we enjoyed closed down that was it! We didn't here anything else about it and many times we never saw or got to experience the whole reason that took us there in the first place, the food. So the dishes we loved so much were gone; kapoot, no mas, bye bye!

Well, being the Black Sheep not only in name I choose to do something about it. We had so many people share with us that we were; their first date, the place they got engaged or celebrated a host of occasions, including but not limited to; conceiving or having their first child the night they were there (I'll let you figure that one out...) and so much more! Let's face it, restaurants are where so much of life is lived and shared. And memories, just the smell or taste or seeing something can many times bring back some of those beautiful memories!

So! Although we're not there to cook it for you, we are making what we did available so you can have fun reliving "the food." Smelling those smells, tasting and trying to duplicate the things you once shared and enjoyed.

The DVD of the entire menu has been out for just over a year now. And I wish I could share the stories we've heard but there's too many! But I will say some of the better ones are: the Black Sheep reunion pot luck parties were everybody brings their favorite dish that they make from the menu! And there's the, "man, you saved me a lot, including the problems of reservations for Valentine's Day", Mother's Day etc. Many of you came from some distance, so of course we hear the, "I don't have to worry about driving" (and you are able to have that second glass of wine!) I think my favorite response has been how easy many of you have found our details and instructions. Even your children as young as five have had great success following our video recipes. We also have the Companion Cookbook available now too!
